Finger food resembling fish fillets in texture, the manufacture of which also exploits the advantages of fish block processing, such as high yield, portion monitoring, high process stability and a high level of automation: that means sizing. Small portions of finger food such as nuggets or goujons can be produced, there is an extraordinary variety. Products are developed according to customer-specific criteria and subjected to a feasibility study.
The desired shapes are punched from sawn planks without creating trimmings.
